¡Viva La Fiesta!
Viva La Fiesta is an event held in spring that celebrates Latin American and Caribbean culture through music, performances, food, and decor. Viva La Fiesta debuted in 2021, and after a hiatus in 2022, began returning annually in 2023.
Though somewhat smaller than past events, our complete Viva La Fiesta event review shows there are still plenty of entertainment, new food and drink offerings, and other park improvements at 2025’s event.

Food & Drink
- An all-new menu at La Cantina featuring shredded beef and crispy chicken tortas, Spanish rice, pinto beans, and tricolor tortilla chips with roasted salsa (see below for menu)
- Authentic flavors like roasted elotes, crispy tostones (fried plantains) with creamy salsa, and specialty churros for a limited time
- Handcrafted cocktails and mocktails made with tropical flavors of mango, coconut, and pineapple
Viva La Fiesta Food
La Cantina is serving up a brand new menu featuring Tortas, which are Mexican sandwiches made with a soft roll (bolillo) and filled with various toppings. These Tortas are served with your choice of side: elote chicharron, Spanish rice, or chips with salsa or pinto beans.
- Shredded Beef Torta
Roasted butter bolillo stacked with creamy pinto beans, mayo, shredded lettuce, cilantro lime crema, shredded beef, pickled red onions, sweet pepper sauce and queso fresco.
